Omelette is one of my favorite fast, quick and easy to prepare dishes. Especially when is full of yummy vegetables. Omnomnom! I am on a mission to eat and live a healthier life, so I decided to make this wonderful omelette. It was so delightful, believe me. Full of seasonal vegetables, quick to make and so delicious to eat. It was a perfect lunch treat for me. I love lots of filing in my food, but if you don’t, of course add less than I did. The Ultimate Healthy Omelette

Ingredients:

  • 3 eggs, lightly beaten
  • handful of spinach
  • handful of button mushrooms, sliced
  • 1 small red onion, sliced
  • 1 spring onion, sliced
  • 2-3 slices of ham, chopped
  • 1 teaspoon of garlic powder
  • 1 tablespoon of evoo
  • 1 tablespoon of ajvar
  • olives, for decoration

Prep:

In a preheated pan, add the evoo and pour the eggs. Tilt the pan until you no longer see raw eggs on the sides. Add the garlic powder and add the vegetables in this order: onions, mushrooms, ham and spinach. Cover with a lid and let it cook for a 5 minutes on low, or until mushrooms are soft.Transfer the omelette on to a plate, top with ajvar, spring onion and olive.
